At the Les Cascades restaurant, Chef Piazzalunga serves up his take on Italian cuisine. He revisits the great classics, adding a personal touch to give it all a modern twist. A blend of traditional and modern that works perfectly.

Tradition means quality produce, protected by labels (e.g. DOP, DOC, IGP) and worked using age-old methods. For example, the “Evolutiva” flour used by the chef, sourced from organic farms and stone-ground.

The modern touch is in the tasting. Like the salmon tartare, which takes on the flavours of a mojito... pretty original and a combination that will leave you pleasantly surprised!
